Mitchell began his coaching career in 2012 at Menlo College in Atherton, California, and then joined his Alma Mater of Willamette University in 2013 as the running backs coach. He also had stops at the University of San Diego in 2015 working with receivers and was a graduate assistant at San Jose State in the spring of 2016. Mitchell played quarterback at Willamette from 2009-12 and was also a collegiate baseball player at San Diego Christian from 2007-08.
Following his collegiate career, Mitchell played professional football in Europe for the Carlstad Crusaders Division 1 team where he earned Offensive Player of the Year.
