High Protein Crispy Sweet and Sour Chicken Fried Rice
This recipe below makes four servings with 53g protein per serving. Feeding the whole team? Multiply this recipe below by five to make roughly 15-20 servings.
Crispy chicken:
- 2lb cubed boneless, skinless chicken breast
- 1 tsp salt & pepper
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 3 tbsp cornstarch
- 1 tsp baking powder
Fried rice:
- Cooking spray
- 2 eggs, scrambled
- 1 bag frozen stir fry vegetable mix
- 1/2 bag frozen bell pepper and onion blend
- 1-2 packets 90 second Jasmine or Basmati rice
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp olive oil
Optional:
- Add pineapple chunks for extra color and flavor
Mix until well coated. Cook on high heat for 4-5 minutes each side till golden and crispy. Remove chicken from skillet, pour sweet and sour sauce of your choice in the skillet to warm it and then put chicken back in skillet. Coat it well with the sweet and sour sauce.
